Olive Oil and Rosemary Roasted Potatoes

Introduction
This is a classic way of preparing potatos in Italy. I love these with roasted chicken or pork.
Ingredients

1 pound  yukon_gold or white_rose potatoes .
1/4 cup extra virgin olive oil
1 small garlic_clove , finely minced
1tsp sea_salt
Several  grinds black_pepper
1 large sprig fresh rosemary , minced

Directions
Step: 1

In a small bowl, combine olive oil, minced garlic, minced rosemary sea_salt and freshly ground black_pepper.
Peel and quarter potatoes. Place potatoes in a greased baking dish, large enough that the potatoes are in one layer. Pour the oil mixture over the potatos and toss to coat well.
Roast potato's in a 350 degree oven 45 minutes  or until golden brown and tender.
