
Gratin Dishes
Gratin ("gra-tawn") dishes or pans come in various shapes and sizes and are made of various materials. Some have handles and some have sloped sides. They range from fairly shallow to deeper. Cooking in a gratin dish allows the food to develop that rich, crusty top. Gratin dishes are meant to be served from oven to table. "Au Gratin" basically means, burnt on top.
