I could swear I posted this topic but it seems to have disapeared.

Awhile back a friend asked me how to carmelize onions.If I am doing a lot of cooking I make a big batch and keep it in the fridge to add as needed.
It's a bit time consuming but they add a wonderful depth of flavor to any dish containing onions.And there great to have on hand for a quick home made onion soup.To make ahead and chill, I put about 1/2 cup of the onions in small containers and pop them in the fridge.When I need them I add them to the pan and let the butter melt and continue with the recipe.

Carmelized Onions:
1 large onion will result in about 1/2 cup carmelized onion.
Peel and slice or dice the onions as desired.Heat some butter over medium heat in a heavy skillet.The onions should be in one layer. When the butter has melted, add the onions and cook for a few minutes stirring constantly. Turn the heat to low and cover the pan. Cook onions slowly,stirring often and adding a little water or white wine (2 to 3 Tablespoons at a time). As the liquid evaporates, add a little more and keep stirring until the onions are a rich brown and very soft, almost disintergrated.

I've never thought of that but carmelized onions on a hot dog sounds wonderful!

I have to have onions on everything, or cheese! whichever is closest! Try onion bread (am sure iv submitted it), its lush!!!
