I brought some fish today but am not sure what to cook them as or with. Does anyone have any suggestions, i have;
A Side of Salmon
Sea Bass
Smoked Cod
Smoked Kipper
Obviously i dont want a dish with all 4 of these mixed together! _________________ Rain rain go away, come again another day  |

Hi there!
for Salmon, i do not know, because I just like it smoked, so i'll let the chef find something good ...
For the smoked cod, I found a recipe for a soup with potatoes, and even cornmeal.. I can translate it, if you like fish soups - I'm not crazy about it -
For the sea bass, if it is fresh, you absolutely need to try my recipe seabass in salt crust. If frozen, i'd just bake it in the oven. with a drizzle of olive oil, salt and some rosemary, or my other recipe "sea bass in crazy water"
Smoked Kipper.. I have no clue what kind of fish is that.....

thanks Guido. it was fresh sea bass but i put it in the freezer because there was no room left in the fridge! I'll try the sea bass in crazy water. Im not that keen on the idea of fish soup. i prefer smoked salmon but also like steaks and because this was half price i had to buy it!! - its absolutely huge!
smoked kipper is smelly brownish yellow fish! _________________ Rain rain go away, come again another day  |

It's ok, just kidding..
I got what it is: is a kind of herring.
the way I do the smoked herrings here is very easy: just put them in a bowl with extra virgin olive oil, with whole black pepper grains and a clove of garlic and marinate for a couple of day. (no need to be in the fridge)
Then serve as appetizer over hot crostini with a spread of salted butter.
Another way is to make "vol au vent" and fill with a piece of herring, and butter at room temperature. _________________ In vino veritas! |

How did I miss this? Oh well with my track record lately who knows, I have been a bit stressed! Try baking the salmon with some lemon, butter and dill weed. With the leftovers you can make my Salmon Patties. Tiege's Maple Chilli Salmon is also really good and can be broiled instead of grilled since it's not really grilling weather over there. _________________ A closed mouth gathers no feet. |

what does broiled mean? in england, a grill is something that you have attached to your cooker, you put the item on a tray under a flame, and it grills the top, then you turn it over and grill the other side. is this the same thing? when american recipes that i use call for broiling i always do this as i dont know what it really means! _________________ Rain rain go away, come again another day  |

Broiling is the same as your grilling. In The US, grilling means cooking on a grill, either a stove top type or a barbecue. Broiling here means cooking under a hot element or flame just as you described. I have an electric oven so for me it's under the hot element. _________________ A closed mouth gathers no feet. |
