When a recipe calls for eggs, large eggs are what is expected. This is not always stated in the recipe though. In some recipes, a non exact egg measure won't cause much difference. In cake recipes the correct amount of eggs is necessary for the texture and volume. Eggs also count as part of the liquid in a recipe so exact amounts can make a big difference in the finished product.
1 large egg is a little over 1/4 cup. If you have only small to medium eggs, break them into a glass measuring cup and beat them with a fork or whisk and check that you have the correct measure.

I never knew that, I assumed it meant medium sized eggs. I generally buy Tesco Value eggs for around 58p for 6. I think these are small. How many small eggs make 1 large egg?

Most people don't, see you learn something new!
Two small eggs make one medium to large egg, Depending on how small they are that is. Do the measure test if your not sure.

Keri and I are going camping again this summer, this time with a friend and her son, so i'll be hunting around for family sized camping recipes in a couple of months!! Very Happy

ok, 1 x tesco value egg = a few millimeters below the rim of 1 x 1/4 cup. I made poached egg on toast for breakfast this morning Very Happy
