This afternoon after taking my daughter to the airport and a quick trip to the grocery store. I set about dismantling the leftover turkey. Oh I cooked a turkey for Christmas day rather than a prime rib. It's a money thing, don't ask.
After cutting away the meat and placing it in a bowl, from which I will make a Turkey pot pie or casserole, and turkey salad for sandwiches ( I use my chicken salad recipe) I diced some for the soup stock I am making from the bones etc. I placed the wings, and parts of each leg and the thighs in a large pot, added peppercorns, halved onions, a few celery ribs and a couple of smashed garlic cloves, covered with water and white wine and placed on low heat to simmer. The rest of the bones and skin I placed in the roaster that I cooked the turkey in and tossed in a 400F oven until they were well browned. When browned I added some white wine and water and placed the roaster on the stove top over two burners. I scraped up all the tasty brown bits and simmer the broth for about 30 minutes.This I will freeze for later use. All in all that turkey was a good bargain, resulting in many delicious meals.
