I absolutely love hearing what people have had for dinner, so this thread is pure nosiness on my part
Tonight it's a complete yummyfood.net meal. Kate's garlic mashed potatoes, and Paula's almost-fat-free chicken pot pie. Although the sour cream in the potatoes will make up for the lack of fat in the pie |

Karen that makes me so happy! I love hearing about members using our recipes.
My daughter and I had beef shanks cooked in a red wine sauce, polenta, steamed carrots and cauliflower.
Last nights dinner was chili lime ahi, lemon rice and fresh peas.
Guido did I have onion frittata when I was there?
I'm still thinking about that sandwich you showed me tonight! Now I'm going to dream about it and drool all over my pillow! _________________ A closed mouth gathers no feet. |

The dinner was great. Potatoes were gorgeous, as was the pie except I used a couple of rashers of smoked bacon that needed to be used up, and it made it very salty, other than that it was great.
Don't know what's for dinner, as of yet, am going food shopping later so will get something while I'm there. |

Oh I'm so happy Karen. I love those potatoes too. I love mashed potatoes with some texture and flavor. Of course good old mashed is also good. Bacon over there must be saltier than here. _________________ A closed mouth gathers no feet. |

That bacon was incredibly salty actually, I should've known that before I put it in.
I love mashed potatoes, full stop, but I think those garlic ones are the best I've ever had, I'm crazy about garlic anyway. In Ireland we have mashed potatoes with spring onions, simmered first in some milk and butter. It's called champ over here.
We ended up having these mackeral strips in oat breadcrumbs that they had on special in the supermarket. I loved them but they were a tad strong for the kids. |

My digestive system has gone on strike. It's spoiled, used to home cooked meals. You see I rarely indulge in fast food, but last night we went out for hamburgers. That should do me for about a year!
Even before my daughter moved in, I cooked good, balanced meals for myself every night. Cooking for one is actually very easy.
My Oven Fried Chicken for example. I keep a zip lock baggie of the flour mixture in my freezer. Toss in a couple of pieces of chicken, shake it up and pop the pieces in my cast iron skillet. Into the oven it goes while I prepare a vegetable and some potatoes. I sit down and watch the news and then it's a nice hot dinner for one. I basically do the ssame thing for my daughter and myself now, just up the number of pieces of chicken. When I buy meat etc, I repackage it into meal sized portions that suit our needs. With a little planning and thinking, anyone one can have a great meal for one. _________________ A closed mouth gathers no feet. |

|
|
For those lucky people that have a great Italian Grocery Store nearby, this is one of my favorite dinner sandwich.
In Rome it's is considered Comfort food and there is nothing better than "Pizza con la Mortazza" and a iced beer...
Pizza con la mortazza (white pizza with mortadella - mortazza is the roman slang for mortadella- )
wood oven white pizza
real Mortadella di Bologna (has nothing to do with american Bologna]
Yummy!!!!!
Did you know?
Mortadella was banned in the USA till 2000: The banning inspired the famous director Mario Monicelli who made the movie "Mortadella" where Sofia Loren was trying to smuggle a whole mortadella in the United states. _________________ In vino veritas!
