OMG I sound like Euell Gibbons! But many flowers are edible. Nasturtiums are so pretty as a garnish on a platter or on top of a salad and they have a wonderful, peppery flavor. Rose petals, harvested early in the day and rinsed lightly just before using add such eye appeal and interest when sprinkled in salads, or uses as a bed under sandwiches. When adding them to salads, the must be the last ingredient added before serving. Butter lettuce and red rose petals are delicious and beautiful as a salad, perfect for that romantic Valentine's dinner. Of course always make sure the flowers you use are not sprayed with pesticides and are not grown where systemic pesticides have been used. Candied violets make a nice garnish on a platter of muffins and I have even sprinkled the petals in muffin batter.Other edible flowers are daisy petals, tulip petals, are all edible. New sword fern fronds have a asperagus like flavor. In some areas they are sold pickled and labeled fiddleheads due to their resemblence to the neck of a violin. Squash blossoms are delicious stuffed, battered and fried. Cucumber blossoms taste like young cucumbers, delicious in salads, coleslaw and such.

People have been using flowers in food for about ten years now. The shop where I do my marketing sells small packages of edible flowers in the salad section. They really have a nice taste if they are fresh. Candied violets have been around for ages. You have the candy bar Violet Crumble, or is that the Aussies?

It is. A honeycomb like candy with a soft violet flavor and a chocolate coating.
