What's your favourite thing to do with Squash? And, which is your favourite squash??

My favourite is Butternet Squash, and I love it mashed with loads of butter!

I love squash as well. I love to make zuccini bread (corguette to you) or butternut squash soup. Baked with brown sugar and butter is also delicious.

Tortelli di zucca (squash stuffed big tortellini) with butter, sage and Parmigiano Reggiano.
Risotto with squash and thyme.
Both dishes originated in the city of Mantova (north Italy)
