I grew up making candy with my Mom. I was always amazed at her skill and strength with it, the endless fudge beating. I still can't beat fudge the way she could. One of the most important lessons I learned from Mom was that the weather effects candy making. When making candies that involve a boiled sugar syrup, such as divinity, lolly pops, peanut brittle for instance, select a day when the weather is fairly dry and no rain is expected. I have made candy on rainy days and had success, and flops. I had a batch of divinity that had to be turned into marshmallow cream because it wouldn't set up. When candy fails, fudge for example, don't throw it away. Pour it back in the pan, reheat and add a little cream and corn syrup and make ice cream topping. Some of my best success started with a failed recipe.
