Hello, me again Smile

Me and Keri are spending this Christmas with my friend Aimi. She loves the cooking ideas I come up with (yay me!!) and has set me a mission to fill her freezer for her! She wants - amongst other things (that I know I can make!) - a vegetable hot pot and a banoffee pie. I have made meat hot pots before - Lancashire is yummy! - but I have never made a veggie hot pot, and so don't really know what vegetables would be suitable. Aimi has a sweet tooth, and loves banoffee pie (made with evaporated milk) and has requested this as well. I know I have a couple of months, but like to practise my recipes so that I know they are up to scratch. Please could someone help me out with making the perfect vegetable hot pot, and the perfect banoffee pie. All recipes submitted are very welcome!

By hot pot do you mean a pot pie? Depending on weather or not she is a vegetarian, I would use chicken stock, thickened



Banoffee Pie
Place on unopened can of sweetened condensed milk (eaglebrand) in a ovenproof pan. Add hot water half way up the sides of the can. Place in a 300 F oven for 2 hours. Let can cool, open a scoop out the caramelized milk into a bowl. In a 9 inch baked pie chell, place a layer of milk, a layer of bananas and so on until all milk is used. Chill several hours before serving. Top with sweetened whipped cream.

Hot pot doesn't have pastry, its kind of like veggies in a sauce with sliced potatoes on top. Like a stew (i think thats the best way to describe it).

Sounds delicious! I would use lots of root vegetables in a chicken sauce.
