This menu celebrates all the foods of spring. It's easy on the cook also.

Herb Crusted Leg Of Lamb
Mint Sauce
Asparagus Parmesan
Olive Oil And Rosemary Roasted Potatoes
Fresh Strawberry Pie

Ok here is our Italian menu for Easter 2008.

Friday dinner is strict, so it's absolutely no meat dinner.
Boiled eggs with only a drizzle of olive oil and a pinch of salt, or boiled fish such as sole, or cod.
Usually I cheat on it, and I will make boiled scampi with mayo and/or avocado sauce, and toasties with butter and smoked salmon *wink*

Saturday in between, is a normal day, so we will make
Spaghetti with pesto
and veal piccata.
As side dish I will probaly prepare some spinach, boiled and than sauteed in the pan with butter and parmigiano reggiano.

On sunday there will be the "big deal"
with italian antipasto, of prosciutto and melon, and green olives.
Then a traditional kind of salami called "Corallina" with an even more traditional cake. The cake is more like a bread rich with eggs and cheese (usually pecorino, parmigiano and gruyere) in the dough; the water you use for the dough has been boiled for 15 minutes with a dozen peppercorns.... Ok OK I know... we are complicated Very Happy

After the antipasto, some people would already be stuffed, but we will go for lasagna.... It never fails!

According to weather conditions, as second course we have two options:
Roasted lamb roman style prepared in the oven or
Scottadito (translated= fingers burner] that is lamb ribs grilled on charcoal, plus eventually some sausages.

You aren't dead yet are you?
Because now is time for some strawberries, or pineapple
and then a big slice of pastiera napoletana will make your day.
A piece of easter egg, coffee, grappa or limoncello and you are ready for a nap.....

Oh my God, that's so much food!!!!! Here in England, good Friday is nothing special (except a day off work!) and Saturday is a normal day. Easter Sunday is traditionaly Roast Beef and Yorkshire Pudding dinner - with all the trimmings like roast potatoes, beef gravy, steamed veggies, followed by hot cross buns with loads of yummy butter! Easter Monday is, again, just another day off of work! LOL

I would have to have tiny portions of everything, and then I probably stop after the lasagna...and it is delicious.

Ok, here is a menu for who is concerned a bit more about calories.

Octopus salad
Spaghetti with clams
Baked Halibut With Potatoes
As side dish I would go with onions, bell peppers, tomatoes "au gratin" or some other grilled veggies (zucchini, eggplant, roasted bell pepper) with just a little bit vinagrette on top.

This is very filling, but not extremely hard on diet!

I just found out that traditionally in England, Hot Cross Buns are served on Good Friday Very Happy

We had the best Easter Egg hunt at work today!! Someone had planted chicks around the offices (pretend ones of course!!) and when you found one, you could exchange it for a mini Easter Egg!! Very Happy

Last year, they hid Cadbury Cream Eggs everywhere, and one of the sales guys & I got in early, and went on a hunt around the building finding all the eggs! There were loads!!!!!!!!
