I was going to put this in recipes, but it's really more of a tip. Years ago when I had a house, I had a big vegetable garden. I grew some of the best corn and was pretty picky about cooking it. Most people cook it to death, but really fresh corn needs just a brief cooking. Bring a big pot of water to a boil...but hold the salt! Add a little sugar to the water to enhance the sweetness of the corn. salt can be added along with the butter at the table. When the water is boiling, turn the heat off and add the corn. Cover the pot and let the corn sit about 10 minutes.

To peel ripe tomatoes beautifully and easily is a snap. Bring a pot of water to a boil, then turn down to a simmer. Have a large bowl of ice water ready. Wash and stem tomatoes, cutting out the stem part. Place tomatoes 1 or 2 at a time in the boiling water. Watch them carefully and remove as soon as you see a crack in the skin ( about 30 seconds to 1 minute). Place the tomatoes immediately in the ice water to stop the cooking. remove from the ice water and the skin will slip right off.

Note: If your grow corn , give Pearl and Honey a try. It's either a Burpee of Gurney seed, and it's the absolute best bi color corn out there! Hungry

Oh it was great Paula. Going outside and picking vegetables and planning what your going to do with them. Dinner often came straight from the garden. I have a little balcony and still manage to have fresh herbs. But I need another garden someday soon!
