A lot of people get confused with the term barbecue and grilling. Grilling is a quick method of cooking over a fire. But barbecue is a whole different concept. True barbecue is slow cooked over wood chips and it is fantastic.Well yesterday I did something I have been thinking about for awhile. I went out and bought another water smoker. I bought an electric Brinkman, even though I prefer charcoal.But since I live upstairs and have a small balcony, for me the electric is the way to go. I have had both electric and charcoal in the past and both work equally well. I'm going to treat Guido to some real southern barbecue when he gets here in July.
These smokers produce the most succulent ribs and brisket imaginable. I also love to smoke a butt end ham on these, it totally changes the flavor and makes them taste like a true smoked ham. A fresh pork butt, smoked over apple wood, with apple cider and beer in the water pan is about as close to food heaven as you can get. I've added several smokers and accessories to the Amazon store. The top comes off and the base can be used as a regular grill, and there light weight and easily go anywhere. I guarentee you will become a true barbecue master in no time with one of these! Chef

My smoker made it's maiden voyage last Wednesday. I cooked a Tri Tip that I put a nice spicy rub on the night before. I also cooked some baked beans on the smoker.They were canned pork and beans that I doctored up.The smoker gave them a wonderfully smoky flavor and they were great with the tender juicy tri tip. I also oil a couple of red bell peppers and smoked them along with my dinner. The next night I sliced them (having peeled them when they were hot) and added them to a pasta salad along with strips of cold tri tip....yummmmmmyyyyy!
