New United States federal rules that went into effect at the beginning of January 2006, give consumers a healthier glimpse into what’s inside packaged foods they buy at the grocery store.

Since Jan. 1, food labels must now disclose to consumers the presence and amount of heart-hazardous trans fats and also whether food products contain any of eight major allergens.

Trans fats are produced when food makers use a process called hydrogenation. that involves adding hydrogen to vegetable oil to turn the oil into a more solid fat. This improve the shelf life of many food items.

Trans fats are most often found in vegetable shortening, some margarines, snacks, salad dressings and many other processed foods.

The mandatory labeling law enforced by the Food and Drug Administration is a true boon to consumers concerned for their health.
