About 6 months ago I had some friends over and we went out for a bucket of chicken. There were a few pieces left over and I decided to have them for lunch the next day. I wasn't in the mood for cold greasy chicken though, so I cranked up the oven to 450 F, dumped the chicken in a cast iron skillet and popped it in the oven. 15 minutes later I had chicken that was crispy and tasted fresh cooked...and it wasn't greasy!

yum! i always keep left overs, i find that cold lasagne is great!! especially with salad cream. yum!

OMG Paula...you and my daughter would get along wonderfully! Guido doesn't like cold food and I don't like cold casseroles so that doesn't sound good, but I take your word haha.

its a time saving thing i learnt in university! cold pizzas always good too!!

my boyfriend folds them up too and eats them like a sausage roll! i worked in pizza hut when i was at university and useed to make some weird creations after the shop had closed. my favorite was making a pasty out of the pizza - thin crust dough, pizza sauce then cheese, mushroom and pepperoni, then folding it in half and putting it through the oven. with salad cream was lovely!

A folded pizza is called "Calzone"
The most common one is stuffed with, mozzarella, ham, mushrooms, and sausage.
Napolitan way is with fresh ricotta, sausage, pepperoni.
There is also a "vegan" with fresh ricotta, spinach or endive.
Note that tomato sauce, is not inside, but on the outside, with a drizzle of extra virgin olive oil.

iv made calzone before, i dont know why i didnt put the 2 together. i think it tastes better with the tomato sauce on the inside though, less dry that way. its lunch time here and the thought of pizza is making me hungry! Wink
