Bread is the most basic of foods. Ancient and mysterious in it's varying forms, but good bread need not be difficult. I baked bread today, with no recipe and only my baking experience to guide me. Bread flour, water, salt and yeast. It was delicious. Crisp and light right from the oven, slathered with butter. You don't need to be a master chef to make good bread. Guido always says good bread needs few ingredients and he is right. I wonder why I haven't made bread for him yet...perhaps I am afraid mine won't match up to the delicious breads of Italy.Below is the method I used to make six wonderful pannini.

i think bread is also the most versatile of foods, you can toast it, make sandwiches (out of just about anything!), bread and butter pudding etc. sandwiches are definately my staple food, dont know what id so without my bread machine! Wink

Bread is probably the food I miss the most when I am in the US.
Italians are pretty much spoiled regarding bread.
Every town, small city, and even the smallest village in the middle of nowhere have its own bakery and you can buy fresh baked bread any time of the day.
And what about pizza and focaccia? Chef

I know I try and find good bread for you, but from now on I will make it! The pizza and focaccia there are devine, I would love to find a recipe for the white pizza....now I miss that bread!
