Families today are busier than ever. When one meal can become two it's a winner in my book.
Dinner 1
Roast chicken , home cooked or from the market (save some for the casserole)
Lemon rice (make extra for the casserole )
Baked fennel prepared with bechemel sauce ( make extra bechemel for the casserole)
Romain and tomato salad with garlic and herb croutons, olive oil
and sea salt ( save remainder of the croutons for casserole)
With the leftovers, make a QuicK And Creamy Chicken Casserole. _________________ A closed mouth gathers no feet.

I do this all the time, it makes things so much easier. If you save the little plastic pots you get when you have takeaway (i steal my mums!) they make great single portion storage containers. This is great if you only want to re-heat/defrost one or two portions at a time rather than having to re-heat everything and wasting some. _________________ Rain rain go away, come again another day |
