Santa Margherita was the first company to vinify the pinkish Pinot Grigio grapes as white wine.
In 1961, they decided to try the white vinification technique used for the production of French Champagne on the best Pinot Grigio grapes from Trentino-Alto Adige.
The must is not left on the skins to avoid its acquiring their rust-red color. After soft-pressing the must is left to ferment 15-20 days at 18°-20°C. The wine is then stored at 15°-16°C. in special stainless-steel tanks until bottling.
The result is incredible:
The pale straw yellow color and its fruity backtaste with a remarkable golden apple flavor are the main characteristics of this wine.
It is perfect as aperitif, but it is special with seafood, and with shellfish based pasta dishes.
Try it with some crustaceans, say lobster or king crabs, as well as with a beautiful swordfish grilled steak.
It's not cheap, ($25 - $30) but it really worth every penny. _________________ In vino veritas! |
