| My church is holding a curry night next month. Everyone has to bring a dish - kind of like (i think) what American's call a Pot Luck. Because there is no way of re-heating stuff, I think it will be best to take items which I can cook in the day, then can be eaten cold. Does anyone have any idea of what I can make for this? I'm really stumped! I thought of Onion Bhajis, but don't know how to make them. Anything Indian will do. Thank you xxxxxxxxxxxxxxxxxx |

Paula, this recipe is good hot or at room temp.
50 chicken wings, cut apart at the joints.
2 recipes Yoghurt Marinade with 2 tsp curry powder and 1/2 tsp turmeric added to the marinade.
Rinse chicken wings and cut apart at the joints. Discard wing tips or save for broth.
Combine marinade ingredients in a glass bowl. Place wings in a large glass pan and pour marinade over, moving wings around to coat evenly. Refigerate overnight.
Add 1 quart peanut oil (prefered) to a deep skillet. Oil is ready when a drop of water pops when it hits the oil (be careful with this step).
Sift together, 2 cups flour, 1 tsp sea_salt, 1 tsp white pepper,1 tsp ground corriander seed and 1/2 tsp chili powder in a bowl. Pour wings into a large colander to drain. Dredge wing pieces in the flour mixture, tapping off excess flour. Fry a few at a time until golden brown. Drain well on paper towels. To serve later, refigerat on a cookie sheet lined with foil. Place in a 400F oven for 30 minutes. When hot, cover with a double thickness of foil and then wrap with several layers of newspaper.
For the dip.
1 1/2 cups plain yoghurt,1/2 cup sour cream 1/2 tsp each, sea_salt, white pepper and curry powder. 1/2 cup loosely packed chopped cilantro leaves (coriander leaf) _________________ A closed mouth gathers no feet. |
