Citrus & Basil Marinated Shrimp

Introduction
These shrimp make a great appetizer or salad. I use frozen shrimp because they cook up better that the frozen and thawed shrimp at most seafood counters.
Ingredients
1/2 pound medium sized shrimp , deveined with tail on (if frozen, cook from frozen state)
1 Tsp sea salt
Marinade
Juice of 1 small lemon
Juice of 1 lime
1/4 cup extra virgin olive_oil
Few grinds black pepper
1/8 tsp Zatarain's Creole Seasoning
1/2 tsp garlic_powder
1/2 tsp onion_powder
1/8 tsp celery seed
Sea salt to taste
6 large basil leaves, stacked, rolled and juilenned
Directions
Step: 1Bring a medium sized pot of water to a boil. Add 1 tsp sea salt and the shrimp. Cook just until the shrimp turn pink and begin to curl. Drain the shrimp and set aside.
Step: 2In a glass bowl wish the lemon and lime juices with the olive oil until emulsified. Add all remaining ingredients except the basil. Toss the shrimp and marinade . Sprinkle with the basil and toss lightly. Cover and marinade at least one hour. Remove from the fridge at least 10 minutes before serving so that olive oil can liquify. These shrimp can be served with the marinade and lots of napkins as an appetizer or arranged  on lettuce cups or in hollowed out tomatoes as a salad course or starter.
