Time | 15 minutes | | Introduction | | Panettone is a traditional Italian Christmas cake. Studded with raisins and fruit bits, it's great with a cup of coffee for breakfast. My daughter Erica is a big fan of panettone. | | Ingredients | | 1/2 of a 2 pound pannetone, sliced and cubed
4 large eggs
2 cups whole milk
1/2 cup granulated_sugar
1/4 cup Ameretto Di Saronno
1 tsp vanilla_extract
1/8 tsp salt
1/2 tsp grated orange zest
6-8 dried figs , diced
1/2 cup golden raisins
1/4 cup pine nuts, lightly toasted or slivered almonds
| | Directions | | Step: 1 | Slice the pannetone about1 inch thick and then cut the slices into cubes. Dice the figs.
Butter a 4 inch deep pan or casserole and add the pannettone. Sprinkle figs, raisins and pine nuts over the
pannettone. | | Step: 2 | In a large bowl, whisk together the eggs, sugar,salt, vanilla, milk, orange zest and amaretto.
Pour the egg mixture over the pannettone and with a spatula, press lightly so that all the cubes soak up
the egg mixture.
Cover and place in the refrigerator for 30 minutes. | | Step: 3 | Preheat oven to 325. Bake the pudding 45 minutes to one hour, or until a knife inserted in the center
comes out clean.
Serve warm with whipped cream. |
