Introduction
Polenta is so versatile. You can serve it just cooked and soft in a soup plate covered with a meat sauce, or vegetables sauteed in a nice sauce. Pour the just cooked polenta into a buttered loaf pan and when it firms up, unmold and slice it and either pan fry or grill on a well oiled bbq. This is true Italian comfort food!
Ingredients

6 cups water
1 1/2 tbsp salt (preferably sea salt)
2 cups coarse ground cornmeal
3 Tbsp butter
1/4 cup grated parmesan (optional)

Directions
Step: 1

Bring water to a boil in a 2 quart saucepan. Add salt and lower heat to a simmer. Slowly pour cornmeal into simmering water, stirring constantly. Cook polenta, stirring constantly until thick and creamy. Remove from heat and add butter and cheese if using and stir to blend well.

Varation: Add chopped sun dried tomatoes,sauteed mushrooms and minced Italian parsley to just cooked polenta. Or try your own combination of ingredients.Pour into a butterd loaf pan. To serve, brown in butter in a skillet or grill on the bbq (oil it first).

Place warm fingers of polenta on top of a main dish salad instead of croutons
