Time | 24 hours | | Cook Time | 10 minutes | | Introduction | | I had never heard of perogies before meeting my sister's Australian boyfriend, Brendan in Canada on a recent holiday. As there were loads of Australin emloyees/guests at the ski resort we were staying at, Perogies were really popular, and sold frozen in the supermarket. I wanted to try them back in England, so got a Canadian friend to email me her recipe. I made a few alterations, and this is what I came up with. | | Ingredients | | Dough
2 Cups all purpose (plain) flour
1/2 tsp salt
2 large egg yolks
2 tsp olive oil
1/2 to 3/4 cup warm water
Filling
2 medium potatoes cut into chunks
2 tsp milk
1 cup grated cheese
salt and pepper to taste | | Directions | | Step: 1 | Dough
Add flour to a mixing bowl and make a well in centre. Add in egg yolks and oil. Stir in well. Add water slowly, kneading in with fingers. | | Step: 2 | Form into a ball, kneading for about 5 minutes. Wrap in plastic wrap and refrigerate over night. | | Step: 3 | Filling
Boil and mash potatoes with the milk. Stir in the cheese. Season with salt and pepper. | | Step: 4 | Assembly
To fill Perogies, divide dough into 4 pieces and shape into a log approximately 1 inch in diameter. Slice in half. Dust with flour and shape each log into a circular disc and flatten like a pizza base, stretching as you go. When the dugh is thin, add a teaspoon of potato mixture to the centre and fold the dough over, making a half moon or "pasty" shape. Place in a pan of boiling water for 5 minutes and then drain. Fry in a hot skillett until crispy - approximately 5 minutes. Serve hot. |
