I don't think you can do crepes wrong, just take care with the actual crepe as they are tender.

3/4 cup whole milk
1/2 cup water
1 cup all_purpose_flour
3 tablespoons melted butter
Butter , for coating the pan
| | Directions | | Step: 1 | In a blender container, combine all of the ingredients and blend for 10 seconds. The batter will be thin.
Pour the batter into a covered bowl and place in the refrigerator for at least 1 hour. This resting period is vital for crepes
that cook nicely and don't tear. | | Step: 2 | Melt the butter in a a small non-stick pan over medium heat, swirling the pan to coat all over with the butter.
Pour about 1/8 cup batter into the center of the pan and swirl to spread evenly.( a standard coffee scoop is 1/8 cup) Cook for 30 seconds and flip. Cook for another 10 seconds and remove to a platter and fold. For each crepe, add a little butter to the pan.
Cover the finished crepes with a damp cotton tea towel. Any unused crepes can be stacked flat in a container with a piece of parchement or waxed paper between each crepe and frozen up to one month. |
