Introduction
	This is great for lunch or as a side with grilled chicken as an evening meal. Kate says: In the states we call these zucchini. I find the smaller zucchini more tender.
Ingredients
	1 large courgette( zucchini) The juice of 1 lemon 4 tablespoons of extra virgin olive oil salt and pepper to taste
Directions
Step: 1	Remove the stem and end of the courgette. Use a swivel vegetable peeler to slice the courgette length ways to make long ribbons and place in a shallow serving dish.
Step: 2	Whisk together the lemon juice, oil, salt and pepper and pour over the sliced courgettes and place in the fridge for 30 minutes. Serve cold.
Menu suggestion
	Great with grilled chicken!!
