Chard With Garlic and Vinegar | Status Approved | | Name | Chard With Garlic and Vinegar | | Category | Italian, Vegetables | | Serves/Yields | 4 to 5 servings | | Source | Kate's own | | Difficulty | Easy | | Introduction | | Chard is a much overlooked vegetable. In the grocery stores, you will most likely find Rainbow Chard or Red Chard and Fordhook, which is a thick stemmed green chard.
I have three chard plants growing in a planter on my balcony and so far I've enjoyed two meals and it was delicious!
The pile of chopped leaves you see made one small serving.
One large bunch of chard will give you about 3 1/2 cup servings, so as you see it shrinks a lot. | | Ingredients | | 2 bunches green chard , about 1 1/2 pounds
1 to 2 large garlic_cloves , minced
2 Tablespoons olive_oil
4 Tablespoons wine vinegar ( I used my homemade herbed white_wine vinegar)
1/8 tsp sea_salt or to taste | | Directions | | Step: 1 | Wash the chard and trim any brown stem ends. Stack the whole leaves with the stems and slice cross ways in about 1 inch wide pieces. | | Step: 2 | In a wide , deep covered pan or pot, heat the olive oil over low heat. Add the garlic and saute, stirring often until fragrant but not brown. | | Step: 3 | Add the chard to the pot and toss to cover with the oil. Cover and cook about 5 minutes, stirring once or twice to ensure all the leaves are coated with the oil. Cook only until the chard turns bright green.
Remove the pan from the heat and add the salt and vinegar, stirring gently to blend. |
