Sicilian Ricotta Pie

Introduction
This is a very easy ricotta pie, made in the old Sicilian way.
In some way it is similar to a cheesecake,
Ingredients
1 lb of fresh ricotta cheese
4 tablespoons of all_purpose_flour
5 tablespoons granulated_sugar
4 egg yolks
2 egg whites
The grated rind of one lemon
8 oz of dark chocolate chips.
A little butter for greasing the pan.
Directions
Step: 1Mix the ricotta cheese by hand or with a wooden spoon until creamy.
Add the flour, sugar and egg yolks to the ricotta.
Add the grated lemon peel and chocolate chips and mix well
Beat 2 egg whites until stiff and gently fold into the ricotta batter.
Step: 2Butter a 10 inch round baking pan.
Gently scoop the batter into the pan.
Cover with aluminum foil and bake at 350°F for 50 minutes.
Remove the foil and continue baking for another 10 to 15 minutes.
Let cake cool completely.
Run a knife around the edge of the cake to loosen. Place a plate over the cake and turn over to un_mould the cake.
You can accompany the cake with melted chocolate.
