Time | 10 minutes | | Cook Time | 0 | | Introduction | | A good sauce that is perfect to top grilled seafood, meats, or cold poached chicken. | | Ingredients | | 1 Slice Italian Bread (1 inch thick slice) 1 Large Bunch Of Fresh Parsley 1/2 Red_Wine_Vinegar 1 Cup Extra_Virgin_Olive_Oil 2 Medium Cloves_Garlic 1 Hard Boiled Egg Sea_Salt & Freshlt Ground Black Pepper to taste | | Directions | | Step: 1 | Soak the bread in the vinegar for about 20 minutes. Chop the parsley and garlic together until they are finely chopped. (or pulse together using a food processor)
| | Step: 2 | Transfer the parsley mixture to a bowl and add the egg yolk, discarding the white of the egg. Squeeze the bread dry and crumble into the bowl. Adding a little olive oil at a time, whisk the ingredients together until you have created a creamy sauce. Season with salt and pepper, and store in the refrigerator until you are ready to use.
Note: depending on the dish, you can vary the taste of the sauce by adding mashed anchovies or a little anchovy paste or capers to the basic sauce. If using salted capers, adjust the amount of salt.
