Glazed Nuts

Introduction

When I saw the price of glazed nuts in the market, I went home and made them myself. Use them in salads, sprinkle on desserts, or as a snack. I put them in pretty containers and give them to friends at Christmas.

Note: Sometimes I sprinkle a little salt on the warm nuts, it gives a nice contrast to the sweetness....or try a little chili powder or even cayenne.

Ingredients

1 cup roughly chopped walnuts or pecans (nut pieces should be roughly the size of a small bean)
1/2 cup granulated sugar
Pinch salt (just what it means, take a little pinch of salt between thumb and forfinger)
1/2 tsp vanilla

Directions
Step: 1

Generously butter a large cookie sheet and butter the tines of 2 forks, set aside.
In a heavy skillet, place sugar and salt. Over medium heat, cook sugar, stirring constantly until it starts to melt. Turn heat to low and don't let the sugar get dark, remove from heat every so often to prevent over browning. When sugar is melted,add vanilla and stir quickly to combine. Remove from heat and add nuts and stir to coat them evenly.Pour nuts onto the buttered cookie sheet and with the buttered forks and working quickly, pull the nuts apart into seperate pieces. There will be some clumps, just try to keep them small. let nuts cool completely. When cool, break up any remaining clumps and place nuts into an air tight container.
