Introduction
This is a standard date nut bread recipe and very good. This freezes well, and the texture actually improves after freezing.
Ingredients

1 1/2 cups dates , pitted and chopped
2 1/4 cups boiling water
3 teaspoons baking_soda
1 cup chopped walnuts or pecans
2 cups granulated_sugar
3 tablespoons butter
2 eggs, beaten
1 teaspoon salt
4 1/2 cups all_purpose _four
1 teaspoon vanilla_extract

Directions
Step: 1


Combine baking soda with the boiling water. Soak the dates in the water and baking soda solution for 30 minutes.
Cream sugar and butter together. Add eggs, vanilla, dates ( with water), nuts, flour, and salt.
Divide batter equally between two 9 x 5 inch greased loaf pans. Bake 1 hour at 300 degrees F or until a cake tester or toothpick comes out clean.
