Macadamia Nut Pie

Introduction

This is a nice change from pecan pie. I like to serve this pie with vanilla ice cream ,but topped with lightly sweetened whipped cream......yummmmm.
You can substitute chopped almonds, cashews or walnuts if you like.

Ingredients

3/4 cup granulated_sugar
1/4 Light brown sugar , packed
2 level tablespoons all_purpose_flour
3 large eggs
3/4 cup light corn_syrup
2 Tbsp heavy_cream or Half & Half
1 1/2 to 2 cups raw, roughly chopped macadamia nuts
3 tablespoons melted butter -cooled slightly
I teaspoon vanilla_extract
1/8 Tsp salt
1 unbaked 8-inch pie shell

 

Directions
Step: 1


Preheat oven to 325 degrees F
Combine sugars, flour and salt, mix well with a whisk to break up any sugar lumps. Beat eggs with,cream and corn syrup. Beat in sugar mixture. Add butter and vanilla, blend well.Stir in the macadamia nuts.
Pour mixture into pie shell. Bake for 50 minutes or until the crust is golden and the center is somewhat set. A knife inserted into the center of the filling should come out almost clean and filling will be shiny.
Cool the pie on a wire rack at room temperature.
Store any leftover pie in the refrigerator (good luck with that!)

Note- If the top of the pie begins to brown too much, lay a sheet of aluminum foil over the pie and continue baking.

I just made some changes to this recipe after a recent experiment and I think it's much better than the original.
