Crock Pot Roasted Chicken

Introduction

This is one of my favorite slow cooker meals.The chicken has a rich flavor and a suculent texture.

Ingredients

1 Whole chicken, about 4 pounds, rinsed and giblets removed. Trim away any fat on the tail section.
1 tsp paprika
1/2 tsp sea_salt
1/2 tsp poultry_seasoning
1/4 tsp black pepper
2 tsp soft butter
1 sprig fresh rosemary
2 tsp olive_oil
6 small whole potatos, any variety, scrubbed
6 med sized carrots , cut in large pieces
2 large onions , quartered
1/4 cup dry white wine
Non stick pan spray

4 to 5 tablespoons prepared  roux


 

Directions
Step: 1Spray the crock pot with the non stick spray and set on high to pre heat.
Pour wine in the crock pot. Pat chicken dry with paper towels and place rosemary sprig in body cavity.
In a small bowl mix the seasonings, oil and butter. Rub this mixture evenly over the chicken. Place any remaining rub in the body cavity.
Place chicken in crock pot and place vegetables on top.Turn the heat to low and cover. Cook for 8-10 hours.
Step: 2

Remove vegetables from the crock pot and keep warm. Gently lift the chicken out, it will be fall off the bone tender.Remove the meat from the bone and place in a large serving bowl. Pour juices into a saucepan and add a few small pieces of roux (I always have some in  the fridge) or make it fresh by cooking 4 ttablsepoons butter and 4 tablespoons flour in a heavy skillet over medium heat, stirring often,until it's a nice medium brown. Add to the juices. Roux will not lump on you at all. Stir well and cook until thickened.If to thick add a little white wine or chicken stock. Add salt and pepper to taste.
Pour a little of the gravy over the chicken and serve the rest on the side.

Note: My crock pot has the removable crock. I load the crock and put it in the fridge overnight and make my roux if I don't have any. In the morning, just pop the crock into the heating element and turn to low. It will take about an hour longer this way but for those of you that work away from home it works out great.
