Zucchini Fritti -- Fried Zucchini

Introduction
Almost everybody likes fried zucchini, and they are ideally suited to accompany any other fried food.
Ingredients

1 Lbs small zucchini
olive_oil for frying
Flour
Salt

Directions
Step: 1

In a heavy pan or deep fryer, heat oil.Take finger sized zucchini, wash them, and cut them into half inch strips, removing some of the center from each strip. Lightly salt them and let them sit for an hour or two, then drain off liquid and flour them. Shake off the excess flour and drop a few pieces at a time into the hot oil (test oil with a bread cube to see if it's hot enough). Wait until they have firmed up before flipping them over if needed , or they will break. When golden brown, remove them with a slotted spoon to absorbent towels or a rack to drain. Serve immediately.
