Passatelli in Brodo

Introduction
Guido said that this is a typical Northern Italian (Emilia Romagna region) soup served on Christmas Eve. I served this as the first course at Thanksgiving and it's wonderful!
Ingredients

PASSATELLI IN BRODO
(Bread and Egg Mix in Broth)


5 large eggs
4 tbs. breadcrumbs, finely grated (1 level Tbsp per egg) or enough to make a stiff dough.
Salt
12 tbs. grated Parmigiano (2 tbsp per egg) reserve remaining for garnish
1/4 tsp ground nutmeg (preferrably fresh ground)
1 1/4 qts. lean beef broth, seasoned to taste.


Directions
Step: 1Beat the eggs and add the breadcrumbs, salt, nutmeg and the parmesan. You should have a stiff dough that you can knead into a ball.
Place the bread mix into a hand crank style food grinder with the largest whole plate, or if you have a kitchen aid mixer with a food grinder or pasta maker attachement I recommend that method. After all the pasetelli are formed, bring the broth to a slow boil and add all at once.Cook for 3 mins and serve. Pass extra parmesan for sprinkling on top.


Note: I have seen people, on this website statistic, looking for passatelli iron tool.  dont waste your money, and make them as above.

I made this for lunch today and it was wonderful! I had some home made broth that I defrosted in the microwave and it took just a few minutes to put together.
