This sandwich was something she could wrap quickly and eat on the bus. Erica still loves them. These work well made the night before and reheated in the microwave for a hot, hearty breakfast in a hurry.
| | Ingredients | | For each sandwich: 1 large biscuit, hamburger bun, english muffin or other roll of your choice. 1 egg 1 slice cheese (american works best I think but use whatever you like) 2 slices cooked ham sandwich meat, or 1 burger sized cooked sausage patty, or 2 rounds canadian bacon , Or 3 strips crisp cooked bacon . About 2 tablespoons butter Salt and pepper to taste
| | Directions | | Step: 1 | In a skillet, melt 1 Tbsp of the butter. Split the roll and place cut side down on the butter and toast slightly. Remove to a plate and place cheese slice on bottom half. In the same skillet,cook the ham or canadian bacon slightly until hot and place on the cheese.If using sausage patties or regular bacon, cook them in a seperate pan and place on the cheese hot. Add remaining butter to the pan and cook the egg. Egg may be scrambled or cooked whole but it's recommended that the yolk is pierced. This makes the sandwich easier to eat. |
