These are great with blueberries sprinkled on after the batter is poured, or sliced bananas, strawberries, nuts etc.The main thing is don't overmix the batter or the pancakes will be tough. Serve these piping hot with warm syrup and butter or your favorite topping. | | Ingredients | | 2 eggs 2 cups buttermilk (preffered) or sour milk (mix milk with 1 Tbsp white vinegar and let sit to curdle) 2 cups all_purpose_flour 1 tsp. baking_soda 2-3 Tbsp granulated_sugar 1 tsp salt 1 1/2 tsp baking_powder 3 Tbsp vegetable_oil
| | Directions | | Step: 1 | In a medium sized mixing bowl, beat eggs. Mix buttermilk with baking soda and add to eggs. Add flour, sugar, salt and baking powder.
| | Step: 2 | Gently fold in vegetable oil but do not over mix the batter. A few small lumps are ok.On a lightly greased griddle heated to 375 degrees(a drop of water will "dance" when it's hot enough) Spoon 4" circles of batter and turn when puffed up and full of little bubbles (edges of pancakes will look dry) . Keep pancakes hot in a warm oven with a damp tea towel on top until all are cooked. |
