Blush Wine Jelly

Introduction
This jelly makes a great gift. It's wonderful served with roasted lamb or with cream cheese and crackers.
Ingredients

2 cups White Zinfandel
3 cups granulated_sugar
1 pouch Certo Liquid Fruit Pectin
Clean, sterilized jelly jars with ring and lid tops.

Directions
Step: 1

Wash rings, lids and jars in hot soapy water. Rinse well. Sterilize jars and lids by boiling them, jars in one pot and lids and rings in another, or run the jars through the dishwasher and boil rings and lids.

Step: 2In a 3 quart saucepan over medium heat, combine wine and sugar, stirring until sugar is dissolved. Bring just to a simmer, don't boil. Remove from heat and stir in the pectin.
Step: 3Pour hot jelly into hot jars . With a damp cloth wipe the rim of the jar to remove any jelly drippings. Seal each jar tightly with caps and rings. Turn jars upside down on a clean, dry tea towel for 30 minutes. Turn right side up and wait to hear the snap of the jars sealing.  Any jars that don't seal should be stored in the refrigerator

I used Blush Zinfandel because i could only find little bottles of the white and didnt think it would be enough. This looked so pretty while it was cooking in the pan, im not sure if mine set as well as it could though. I couldn't find a sachet of liquid pectin but i used the same brand and it was in a bottle so i used half of the bottle which i thought would be about right for the quantity of jelly.
