| | Directions | | Step: 1 | Heat olive oil in a deep heavy skillet and cook onion and peppers over medirm heat until onion is golden. Add garlic and rice and cook, stirring constantly until rice is slightly brown. Combine tomato paste with chicken stock and seasonings.Slowly add stock to the rice mixture.Stir well. turn heat down to a simmer, cover pan and cook 15 minutes, stirring occasionally.After 15 minutes check rice, it should be slightly al dente. This rice will not be fluffy, but nice and moist. |
