Bouillabaisse Soup

Introduction
This is a lighter version of the classic bouilliabaisse and is more a soup style.On a cold winter evening this soup will really warm you up.
Ingredients

4 slices bacon ,cut up
1 med onion , chopped
1 small green bell_pepper , diced
1/4 cup sliced celery
2 garlic_cloves , minced
4 tomatoes , peeled, seeded and chopped
2 Cups sliced white_mushrooms
2 Cups water
1 small can tomato_paste
1/3 Cup dry white wine
1 cup fish stock or 4 tsp. shrimp bouillon granules (Knorr makes a good one)
1 bay_leaf
1/2 tsp oregano
1/2 tsp granulated_sugar
1/4 tsp sage
1 tsp sea_salt
1/2 tsp black pepper
1 tsp capers , minced
1 tsp red_pepper_flakes , or to taste
1 pound medium firm white fish fillets OR 1 pound peeled and deveined medium shrimp with tails on, OR 1 pound clams or mussels Or any combination of your choice.

Note: If using bouillion, omit salt and adjust finished soup with salt to your individual taste. Knorr makes a very good shrimp bouillion. Seafood stocks are available in some specialty markets such as WholeFoods.

 


 

Directions
Step: 1

In a medium sized soup pot, cook bacon over medium high heat, stirring occasionally until crisp. Remove with slotted spoon. To bacon fat, add onion, red pepperr,diced pepper,mushrooms celery, capers and garlic. Cook over medium heat until vegetables are tender.

Step: 2Add bacon back to the pot. Combine wine, tomato paste, fish stock or bouillion and seasonings, stirring until the mixture is smooth. Add wine mixture to the soup pot. Simmer 30 minutes.Taste broth and adjust salt and pepper to taste Cut fish fillets into pieces. Add to soup. Simmer until fish flakes easily, about 8 minutes. Remove bay leaf before serving.

Note: If using clams or mussels, cook them in the broth until the shells open. Discard any that do not open.

Menu suggestion
This is a menu worthy of company, but it also make a romantic dinner for two. Freeze half the sauce without the fish for another meal.
Guido suggests a Pinot Grigio or Galestro for the wine selection.
