Cream of Mushroom Soup

Introduction
This soup makes a nice first course or a great light dinner.
Ingredients

3 cups sliced fresh mushrooms (chop one cup of the mushrooms)
4 Tbsp butter
4 Tbsp all_purpose_flour
1/2 tsp sea_salt
1/8 tsp white_pepper
1 quart half_and_half
1 cup white wine
2 Tbsp chopped chives or parsley

Directions
Step: 1

In large saucepan sauté mushrooms and onions in butter until tender. Blend in flour, salt and pepper and cook for 5 minutes stirring constantly. Add white wine and cook for 10 minutes, stirring occasionally .Gradually add half and half. Cook over medium heat, stirring constantly, until soup has thickened. Sprinkle chopped chives over each serving.
