Introduction
This is like a more refined and richer form of sour cream. It can be sweetened and flavored in many different ways to top desserts, especially good on fruit desserts. Plain it adds a wonderful creamy texture to cream soups or bisques. It's uses are endless.
Ingredients

Don't worry about the creme fraiche spoiling while it's sitting on the counter; the acid in the mixture prevents bacteria growth associated with dairy products.


1 cup heavy cream
2 tablespoons cultured buttermilk


Directions
Step: 1

In a bowl, whisk together the cream and buttermilk. Cover with a clean kitchen cloth in a warm, draft-free place and let sit until thickened, but still a pourable consistency, 12 to 16 hours. Stir and refrigerate until ready to use. (Can be refrigerated for up to 2 week.)
