Introduction

These apples are great served over pancakes or french toast or as a side dish with roast chicken or pork.I like to add a little calvados and serve the hot apples over  rounds of baked puff pastry topped with vanilla ice cream or creme fraiche.

Ingredients

4 medium apples, (gala are my favorite but any cood cooking apple will do)peeled, cored and sliced or cubed.

4 Tbsp butter
6 Tbsp sugar
1/4 cup apple juice or water
1/4 tsp ground cinnamon or nutmeg

Directions
Step: 1

In a heavy skillet melt the butter. Add the sugar and cook over medium heat until the mixture is a very pale golden brown. Add apples and water and stir to coat the apples with the sugar mixture. Add the cinnamon or nutmeg. Turn heat to med low and cook, stirring occasionaly until apples are tender but still firm and sauce is syrupy.
