Broiled Peaches

Introduction

This dish makes a nice light dessert or a great side dish with pork,chicken or lamb. An elegant way to serve these peaches as a dessert: Place a spoonful of raspberry coulis and a spoonful of lightly sweetened creme fraiche side by side on each dessert plate. Draw a wooden skewer through the two sauces in a swirl motion to make an attractive design.
Place a peach half in the middle of each plate and sprinkle toasted almond slices over sauces around peach half.Serve with a nice dessert wine such as a Raspberry Framboise.

Ingredients

4 ripe peaches (white peaches are particulary good) Canned peach halves can also be used
1/2 cup brown_sugar
1/4 cup sliced almonds
4 Tbsp cold butter
4 Tbsp almond_paste
1/8 tsp ground nutmeg


 

Directions
Step: 1Wash peaches, cut in half and remove stone.
Place peach halves in a shallow buttered casserole dish.Combine brown sugar, butter, almond paste and nutmeg in a bowl and cut the butter and almond paste in wirh a pastry blender or your fingers. Add almond slices and mix lightly with a fork.
Step: 2Mound a little of the crumble mixture on top of each peach half, dividing it equally until the mixture is all used. Set oven rack to half way from the broiler and broil peaches until topping is bubbly and peaches are warm, about 8 minutes.
Arrange peach halves on a warm serving plate and pass some lightly sweetened creme fraiche as a garnish.
