Introduction
These parfaits are a nice way to enjoy the wonderful flavor of fresh raspberries. The tart creamy flavor of the creme fraiche adds a nice contrast to the berries and kirsch.
Ingredients

2 pints fresh raspberries
4 Tbsp Kirsch liquor
6 Tbsp granulated_sugar
2 cups creme fraiche , homemade or purchased
1/2 cup light cream .


Directions
Step: 1Mix creme fraiche with the cream and 2 Tbsp of the sugar.Rinse and drain berries. Pick out a few nice berries for garnish.Place half the berries in a glass bowl. Add the kirsch and remaining sugar to the berries and lightly mash with the back of a spoon or a potato masher.


Step: 2In four medium sized parfait glasses ,place a layer of the creme fraiche, then a layer of the mashed berries. Sprinkle a few whole berries over the mashed berries.Continue with these layers. The last layer should me the mashed berries.Place a long bamboo skewer straight down the side of each parfait glass and then slowly draw it up to give a slight swirl effect.Repeat this 2 or 3 times in each parfait, wiping the skewer off after each pull. Place a small dollop of the creme fraiche slightly to the side of each glass and top with one or two of the reserved garnish berries.Chill parfaits at least 40 minutes before serving.
