A very nice side dish or even a good snack | | Ingredients | | 1 lb very small tomatoes , such as cherry , washed 2-6 oz cans tuna fish packed in oil, drained and mashed 5 T extra virgin olive oil 1 1/2 T lemon juice, or to taste 2 T capers , rinsed off, chopped 2 T fresh flat leaf parsley , very finely chopped Freshly ground black pepper | | Directions | | Step: 1 | Cut tops off tomatoes and scoop out flesh with a grapefruit spoon. reserve pulp. Prepare the filling by mixing tuna,capers, tomato's pulp and lemon juice thoroughly. Spoon mixture into tomato cavities. Arrange tomatoes on a platter, sprinkle with chopped parsley and drizzle with extra virgin olive oil and serve.
Option: I usually add mayonnaise on top. |

My daughter and I found some really nice cherry tomatoes at a local produce stand. I used the wonderful tuna that Guido brings me when he visits. They were wonderful, with some slices of fresh Italian bread and cool lemonade (Limoncello in mine!) |
