Introduction

These are a very moist and delicious muffin, packed with nutrition.They keep well in a tightly covered container and actually become moister the next day.

Ingredients

4 tablespoons butter
1/2 cup applesauce
2/3 cup all_purpose_flour
1/2 cup whole_wheat_flour
1 1/2 teaspoon baking_soda
1/8 teaspoon salt
1 teaspoon cinnamon
1/2 cup bran
1/2 cup dark brown_sugar , firmly packed
1/4 cup honey
1/2 cup raisins
1/2 cup chopped dates
1 egg
1 cup buttermilk
1/2 cup orange juice
Zest of 1 med orange
1 cup chopped nuts (optional)

Note: You can use all dates or all raisins , depending on your preference.

Directions
Step: 1

Preheat oven to 400
Prepare pans by lining with paper cups or greasing

Zest orange and set aside.

In a medium sauce pan, heat orange juice to just simmering. Add dates, raisins, butter, honey, brown sugar and applesauce. Cook , stirring constantly until butter is melted. Remove pan  from the heat and let mixture sit till only slightly warm.

Step: 2

In a  mixing bowl, combine flours, bran,salt, orange zest, baking soda and cinnamon. In another bowl beat eggs and  buttermilk together.

Add all wet ingredients to flour mixture and mix gently with a wooden spoon just until all dry ingredients are incorporated. Using an ice cream scoop, place I scoop batter in each cup.Sprinkle tops with dry oatmeal or nuts if desired.

Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Cool muffins on a wire rack and store in an airtight container.
