Finnish Pea Soup

Introduction
A friend of mine makes this soup in the winter and it's really good. It's similiar to the American split pea soup.
Ingredients

 1 3/4 cup dry peas ( whole dried peas if you can find them)
 2 liters water( 1/2 gallon or 17 cups)
 1 onion
 1 1/3 pounds salted pork shoulder(ham shoulder will work)
 1 carrot
 1 tsp dried marjoram or thyme
 Salt and pepper to taste

 

Directions
Step: 1

Soak peas in water overnight. Drain off water and rinse peas. Add fresh water to the pot and bring to a boil. As peas cook, skim off any empty shells that rise to the surface.Peel and chop the onion and peel the carrot. Add peeled carrot (whole) and the chopped onion, meat and marjoram or thyme. Simmer covered for 1 1 1/2 hours, until the meat is done. Discard carrot. Cube meat and put it back. Season soup with salt and pepper to taste.Serve soup with a dab of whole grain mustard if desired.
