For a hearty winter supper, top the beans with polish sausage the last 30 minutes of baking. | | Ingredients | | 1 lb dried navy_beans, picked over for stones, bad beans etc. 1 large white onion , diced fine 1/2 cup dark molasses 1/2 teaspoon dry mustard_powder 1/2 cup dark brown_sugar 1 tsp sea_salt 1/8 tsp red_pepper_flakes 1/4 lb lean salt pork, diced fine 4 strips thick sliced bacon , cooked, but not crisp
| | Directions | | Step: 1 | Rinse the picked over beans and then soak overnight covered with water. Place salt pork and onions in a large pot over medium heat and cook, stirring often until onions are translucent. Add the beans and enough water to cover the beans. Simmer beans for 1 hour. Drain the liquid from the beans into a bowl.
| | Step: 2 | To 1 cup of the drained liquid, add the molasses, brown sugar, mustard and salt and mix well to blend.Pour the mixture over the beans and add enough of the drained bean liquid to cover the beans. Cover the bean pot. Place in a 300 degree oven for about 4 hours. Uncover, lay bacon strips over the top and cook uncovered for another hour. If the beans seem too dry, add a litte of the reserved bean liquid to moisten them. |
