5 whole pieces, preserved ginger (candied ginger in syrup) 1 stick + 1 Tbsp butter 1/2 cup granulated_sugar 1 egg A pinch of salt ½ tsp ground ginger 1 1/3 cups all_purpose_flour
Wash for cookies One egg yolk 1 Tbsp Water
| | Directions | | Step: 1 | Chop three whole gingers into very fine pieces; dice the other two. In a medium bowl, cream butter, sugar, whole egg, salt, ground ginger and finely chopped ginger. Sift in flour, and blend ingredients until the dough is smooth. Form the dough into a large ball, and wrap it in plastic wrap. Refrigerate for 30 minutes. Preheat oven to 375 F. Divide the dough into three portions. On a lightly floured surface, roll out each piece of dough to a rectangle about 1/2 inch thick. Slice therolled dough into 2 inch wide strips. Cut across the strips to form 3 inch long obling pieces.Repeat this step with remaining dough. Place the cookies on ungreased baking sheets. Beat the egg yolk with a the water and brush over the cookies. Sprinkle cookies with diced ginger, press ginger into each cookie slightly. Bake for 15 minutes or until golden brown. Remove from the baking sheets with a spatula and let cookies cool on a wire rack. Store in an airtight container.
